Gluten-Free Super Clean Protein Pancakes

These pancakes are the easiest thing to make with only three base ingredients - banana, eggs, and protein powder.  This variation has added cooked pumpkin and cinnamon for those winter feels.  Quick and easy to make these are a perfect pre-or-post training brekkie, and leftovers can be eaten cold as a snack!

Ingredients
1 medium-large banana
2 eggs
1/2 C cooked pumpkin
1 scoop Nothing Naughty vanilla pea or whey protein
1/2 tsp cinnamon

Method
1.  Heat a little coconut oil or butter in a large frypan on medium-high heat.
2.  Blend all ingredients together in a blender or magic bullet.
3.  Pour batter into pan into small or large pancakes depending on preference. Cook until little bubbles form and base of pancake is stable enough to flip (Approx 1-2 minutes each side)
4.  Serve with desired toppings (our favourites are blueberries, sliced banana, yoghurt, Nothing Naughty almond butter, and shredded coconut)
