You can't go wrong with banana bread! This recipe incorporates our pea protein for added protein content. Gluten, dairy, and refined-sugar free.
2 large bananas, mashed
2 medium-large eggs
1/3 C coconut oil, melted
1/2 C milk of choice
2 TBSP honey, maple or fibre syrup
1 tsp vanilla essence
1 tsp cinnamon
2 C brown rice flour or other gluten-free flour
2 scoops Nothing Naughty Vanilla or Chocolate Pea Protein
1 1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1 large banana
Drizzle of honey
Desiccated coconut & cacao nibs
1. Preheat oven to 180 degrees celsius and grease or line a loaf dish (approx 28cm x 18cm).
2. Stir all wet ingredients in a large bowl until well-combined. In a separate bowl mix all dry ingredients to combine then stir wet through dry until well-blended.
3. Pour batter into prepared loaf dish and top with the fresh banana (slice in half and place one half on either side), coconut, and cacao nibs, and a drizzle of honey. Bake for approx 50 minutes or until a skewer comes out clean.
4. Serve fresh or store in an airtight container.
