Gluten-Free, No-Bake Protein & Fibre Muesli Slice

Gluten free | Refined sugar free | Plant-based | 3-4g protein per slice

These are super quick to make and filled with goodness! You can store these in the fridge or freezer and thaw as needed. They are great for lunchboxes or a quick morning team. My teenage kids love them - so that’s saying something!

Prep time: 15 mins | Set time: 4 hours

Ingredients (makes 8 slices)

  • ¼ cup peanut butter (we use our Nothing Naughty Peanut Butter Powder)
  • ⅓ cup Nothing Naughty Fibre (Maple) Syrup (alternatively use syrup or honey)
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 scoop Nothing Naughty Pea Protein Powder (Vanilla) - 17g protein  
  • ¾ cup gluten free oats
  • ¾ cup rice crispy cereal
  • ¼ cup ground flaxseed or chia seeds
  • ⅓ cup coconut threads
  • pinch of salt
  • 1 tsp cinnamon
  • ¼ cup almonds
  • ¼ cup cashews
  • ¼ cup pumpkin seeds
  • ¼ cup cranberries
  • ¼ cup raisins
  • ⅓ cup vegan chocolate chips (optional)


Directions:

  1. Line a square baking tin with non-stick baking paper paper, ensuring the edges of the tin are lined too. Set aside.

  2. In a medium size microwave safe bowl, combine the peanut butter, honey, and coconut oil. Heat until completely melted then add vanilla.

  3. In a large bowl combine the protein powder, gluten free oats, rice crispy cereal, flaxseed/chia seeds, coconut, salt and cinnamon. Mix and then add the nuts, dried fruit and chocolate chips(optional). Once fully combined, add in peanut butter mixture and stir until combined.

  4. Add to the prepared baking tin, press down firmly, then add more nuts, dried 

  5. fruit and chocolate chips to top if desired.

  6. Place the baking tin in the fridge for a minimum 4 hours or overnight. Cut into 8 slices and enjoy!


Storage: You can store these no-bake protein slices at room temperature for up to 1 week. You can also store them in the fridge.

To Freeze: Place the slices in an airtight, freezer-safe storage container and freeze for up to 3 months. Let these sweet treats thaw and enjoy!
