Vanilla & Berry Chia Pudding (High Protein)

Optional Dairy-free | Plant-based | 17g Protein | Gluten-free

This is another super quick recipe that can be enjoyed for breakfast or as a dessert. It's both protein packed and full of fibre - a perfect way to start the day.

Prep time: 5 mins | Set time: 1 hour in fridge or overnight in fridge

Ingredients:

  • ¼ cup chia seeds (great fibre source!)
  • ¼ Greek yoghurt (can replace with coconut yoghurt to make dairy-free & PB)
  • ½ tsp vanilla extract
  • ¾ cup of milk of choice (soy, almond, coconut or whole milk if preferred)
  • 2 scoop of Nothing Naughty Lean Bean Protein (mixed berry) - 20g protein
  • ½ cup frozen berries 

Instructions:

  1. Add all ingredients to a mixing bowl or jar. Mix together until combined. Refrigerate for at least 1 hour, preferably overnight.

  2. Stir again before serving/eating

  3. You can layer or stir through berry coulis to make the chia pudding even more fancy looking. I usually just microwave ½ cup of berries and mush these to make a coulis.
