Vanilla Coconut Cookie Bars

These make fun lunchbox treats for the kiddos that are gluten-free, low sugar and high in plant-based protein! Created by @itswhollyum

INGREDIENTS
1/2 C Ground Blanched Almond
1/3 C Lean Bean Protein Vanilla Bean
1/4 C Shredded Coconut
2 TBSP Almond Butter
2 TBSP Fibre Syrup Natural
1/2 tsp Vanilla Extract
2-3 tsp Almond Milk
Small pinch of Salt
ICING
1.5 TBSP Coconut Oil, melted
2 TBSP Coconut Milk Powder
1-2 tsp Powdered Stevia/Erythritol
1 tsp Lean Bean Protein Vanilla Bean

METHOD
1. Combine dry ingredients in a large bowl before stirring in wet ingredients. Stir/fold dough until it can hold shape when pressed together (add a tiny bit more milk/syrup as needed if too dry
2. Press into a lined mini loaf tin and pop in freezer. Stir together icing ingredients until smooth, adding more sweetener to taste. Drizzle over base and top with optional chocolate chips, coconut and sprinkles for added excitement!
