Chewy Vanilla Protein Balls

Low-sugar and with a dash of matcha for a vibrant colour and taste! Created by Meg from @itswhollyum these high protein balls make a great lunchbox addition that will keep you full with a dose of our plant-based Lean Bean Protein. 

INGREDIENTS
1/2 C Ground Blanched Almond (or oat flour if not GF)
1/4 Lean Bean Protein Vanilla Bean
1 TBSP Keto Sweetener
3 TBSP Cashew Butter
2 TBSP Milk of choice
1 tsp Vanilla Extract
Coating:
1/3 C White Chocolate Chips (sugar-free optional)
1 TBSP Coconut Oil
1/4 - 1/2 tsp Vibrant Matcha Powder (add to desired taste/colour)

METHOD
1. If cashew butter is thick/dry, microwave it for 10-20 seconds until soft. Set aside and stir dry ingredients together in a large bowl. Next, stir in cashew butter and other wet ingredients.
2. Mixture should come together in a soft, cohesive ball. Roll into 8 or so balls and place on a line tray before freezing.
3. Melt chocolate chips & oil together, stopping the microwave every 10 seconds or so to stir and avoid burning. Use a fork to place the balls into melted chocolate and rotate until coated. You may wish to cat half before adding the matcha to the coating and doing the other half (however your creative flair inclines you!)
