Low-sugar Peanut Butter and Jelly Slice

An 'ol favourite combo of PB+J made with wholefruits and our low-carb natural sweeteners for extra sweetness! Created by our head baker @itswhollyum

INGREDIENTS
Base
1/2 C Ground Blanched Almond
1/2 C Shredded Coconut
1/3 C Powdered Peanut Butter
1/3 C Peanut Butter
1/4 C Fibre Syrup Natural
2 TBSP Coconut Oil, melted
1/2 tsp Vanilla Extract
Pinch of Salt (to taste)

Jelly Topping
1 C Frozen Blueberries
1/2 C Frozen Blackcurrants / other berries
2 TBSP Chia Seeds
2 TBSP Coconut Oil, melted
3 TBSP Keto Sweetener

Method
1. Stir together dry ingredients for base, followed by stirring in the wet ingredients.
2. Press into a lined loaf tin and place in freezer to set.
3. Make jelly by defrosting berries in microwave or pot. Mash with fork and stir in other topping ingredients, taste and add more sweetener as desired. 
4. Allow topping to set for a few minutes before spreading over base. Place in fridge for several hours or overnight to set.
5. Slice and serve or store in fridge until ready to eat.
