Pickled Beetroot Lettuce Cups With Toasted Seeds

Ingredients:
2 medium sized beetroot
8 cos lettuce leaves
Dressing ingredients
2 Tbsp extra virgin olive oil
2 Tbsp apple cider vinegar
1 Tbsp spoon Fibre Syrup (add more if you like it more sweet!)
Season with salt and pepper to taste
2 Tbsp spoon chia seeds
Toasted seeds (I used the seeds below, but use whichever seeds you prefer)
Pumpkin seeds
Sunflower seeds
Sesame seeds
Sliced Almonds
Directions:
Put seeds of your choice into a tray lined with baking paper. Toast the seeds in a 180-degree oven.
Grate your beetroot and place it in a bowl. In a separate bowl, mix the dressing ingredients, excluding the chia seeds. Next, combine the dressing with the grated beetroot. Then, add the chia seeds.
Place the beetroot mixture in the centre of the lettuce leaves and sprinkle the toasted seeds on top. Enjoy!
