CRUNCHY PEANUT AND SWEET CHILLI NOODLES

Makes enough for 2x people

Ingredients:

2x packs of noodles

1 heaped Tbsp Nothing Naughty Premium Powdered Peanut Butter

1 1/2 Tbsp soy sauce

1 1/2 Tbsp sesame oil

1/2 Tbsp white vinegar

1 Tbsp honey or liquid sweetener

2 Tbsp Nothing Naughty Sweet Chilli Sauce

1 heaped tsp garlic powder

Veggies of your choice; I used carrot, courgette, and mushroom

To garnish: Crushed peanuts, spring onion, fried shallots and sesame seeds

 

Tip: I get my noodles from a refill store which are organic and have better ingredients than store-bought packet noodles. They also taste just as good!

I also added some crispy tofu that I had leftover from another meal on top for an extra source of protein.

 

Directions:

Dice up your veggies and fry them in a pan over low to medium heat. Bring a pot of water to a boil and add your noodles; these should take about 5-10 minutes to cook. While they are cooking, mix all your sauce ingredients in a bowl. Drain the noodles once they are cooked. Once the veggies are done, combine them with your sauce and noodles. Mix well and let it simmer for about 5-10 minutes, stirring occasionally. Dish it up on a plate and add your garnishes. Enjoy!
