Salted Caramel Peanut Butter Cups

All the epic flavours wrapped into one. A low sugar, high-protein take on the classic caramel slice!

All ingredients listed in bold are from our own Nothing Naughty pantry and can be found in the online store :)

Base = Soft biscuit
Filling = Gooey salted caramel goodness
Topping = Crackly dark chocolate

Base
1/4C Ground Blanched Almond
25g (3.5 TBSP) Caramel Pea Protein
1.5 TBSP Peanut Butter Powder
1.5 TBSP Caramel Fibre Syrup
1.5 TBSP Water
Pinch of salt to taste

Filling
1 TBSP Peanut Butter Powder
1 TBSP Caramel Fibre Syrup
1.5 TBSP Water
2 Heaped TBSP Peanut Butter
Good pinch of salt to taste

Topping
30g (1/4 C) Chocolate of choice, melted (can also use our Keto Chocolate Mix)

Method

1. Stir dry ingredients together for the base. Add syrup and water, combining to make a soft/cohesive dough.
2. Press dough into 4 cupcake holders and place in fridge to set.
3. Make caramel by combining all filling ingredients, add more sweetener to taste if desired.
4. Dollop caramel onto each crust before drizzling with chocolate. Top with flaky salt if you like and allow to firm up in the fridge for a few hours before consuming :)
